1/2 Cup San Remo Reg Couscous

500g fresh black mussels
pepper
1 tbsp chopped thyme
zest and juice from 1 lemon
1 teaspoon chilli flakes
1 clove garlic finely diced
100ml tomato puree
1 tbsp chopped mint
100g prosciutto diced
1 tbsp finely chopped parsley

Method

  1. Steam open the mussels, remove the top shell and keep the mussel meat in the half shell.
  2. Mix other ingredients together and stuff inside the mussels.
  3. Bake in a 200 degree oven for around 8 minutes until golden on top.
  4. Serve with lemon wedges and more fresh herbs.
