Ingredients

1 cup San Remo Reg No28 Small Shells 500g

1 medium zucchini – diced
2 litres chicken/vegetable stock
2 cloves garlic – finely diced
1 sweet potato – diced
2 chicken breasts
pepper and mixed herbs to taste
2 medium carrots – diced
1 handful chopped broccoli (or whatever veggies you have in the fridge)
1 tblsp olive oil
2 celery sticks – diced
1 med-large brown onion – diced

Method

    • In a small saucepan bring to the boil enough water to cover the chicken. Add chicken and reduce heat to simmer and poach chicken for approx 15 mins or until chicken is cooked through. Remove chicken set aside to cool then break chicken up into small pieces. Discard water.

Soup Preparation

    1. Heat oil in large saucepan.
    2. Add onion; cook while stirring until clear and soft (approx 5 mins)
    3. Add garlic; cook while stirring (approx 1 minute)
    4. Add vegetables; cook and stir until softened (approx 5 mins)
    5. Add stock and pasta; reduce heat and simmer partly covered and stirring occasionally until veggies and pasta are cooked (approx 20 mins). Extra stock or water can be added if required to adjust consistency of soup/broth.
    6. Add chicken, pepper and herbs; continue simmering (approx 5 mins)
