Ingredients

San Remo Reg No17 Trivelle 500g

1 tbsp olive oil
¼ cup chopped fresh parsley
2 tbsp toasted pine nuts
250g mushrooms, thinly sliced
400g pork fillet, very thinly sliced
1 egg, lightly beaten
¼ cup grated fresh parmesan cheese
1 onion, finely chopped
½ cup sour cream

Method

  1. Cook pasta according to packet directions.
  2. Heat oil in large frying pan; add onion and pork. Cook stirring, until pork is cooked and golden.
  3. Add mushrooms and cook until soft. Stir in combined sour cream, egg, parmesan cheese and parsley. Stir over low heat until heated through.
  4. Add the drained pasta to the pork and mushroom sauce and gently blended with sauce.
  5. Scatter with toasted pine nuts and serve.
