Ingredients

San Remo Reg No12 Fettuccine 500g

3 cups sliced mushrooms
1 cup diced lean ham
1 chicken breast, diced
1 medium onion
1 ½ tbsp crushed garlic
375ml can evaporated skim milk
2 sachets “Cream of Mushroom” cup soup
Âľ cup skim milk
2 level tbsp plain flour
Salt and pepper to taste
1 level tbsp beef stock powder

Method

  1. Cook pasta as per packet directions.
  2. Coat large non-stick saucepan with cooking spray.
  3. Sauté garlic and onion for 2 minutes, then add chicken.
  4. When almost cooked, toss in ham and cook for 2 minutes. Add sliced mushrooms and cook for a further 2-3 minutes. Remove from pan and set to one side.
  5. In the same saucepan melt margarine. Add flour & mix well. Slowly add in evaporated milk and then skim milk, mixing continually until smooth.
  6. Stir in dry soup mix, stock powder and parmesan cheese. Return mushroom mixture to pot, combine well, add salt and pepper to taste.
