4 tablesp dry white wine
salt and pepper to taste
85g unsalted butter
130g organic peas
1 bunch organic spring onions, chopped
4 young organic carrots, chopped
1 bunch organic asparagus, chopped

Method

  1. Cook pasta according to packet directions.
  2. Bring a saucepan of water to the boil. Blanch the prepared vegetables, drain
  3. In a pan melt the butter and add the wine and salt & pepper to taste.
  4. Cook over medium heat until the wine has reduced.
  5. Add the blanched vegetables and pasta, toss to coat and serve.
