Method
- Slice aubergine and sprinkle with salt. Leave until part of the moisture has been drawn out. Rinse well, wipe each slice dry, dust with flour, deep fry with oil and keep warm.
- Fry chopped onion with half butter. Dice ham and chicken breast and add to frying onion. Season with salt and pepper. Sprinkle with brandy and let dry. Add chopped tomato pulp and cook for ten minutes.
- Cook pasta according to packet directions. Drain.
- Toss pasta with remaining butter, sauce and Parmesan cheese. Coat with diced mozzarella and aubergine slices. Bake in hot oven for five minutes and serve.
