Ingredients

San Remo No 18 Penne 500g

Salt and freshly ground pepper
250g black olives, pitted
Chilli powder to taste
1 tsp dried basil
1 tbsp dried parsley
3 cloves garlic, crushed
¼ cup olive oil
2 x 400g can peeled tomatoes, chopped
Parmesan cheese, optional
1-2 tablespoons fresh or dried chillies, chopped

Method

  1. Heat oil in large frying pan, add garlic and fry until brown, add the chopped tomatoes with juice and cook for 5 to 10 minutes.
  2. Add the olives, parsley and basil and cook for a further 5 minutes stirring frequently. Season with chilli, salt and pepper to taste.
  3. Cook pasta according to packet directions. Drain well and return to pot. Add the sauce and gently stir it through.
  4. Serve hot sprinkled with parmesan cheese and garnished with basil or parsley leaves.
