Ingredients

San Remo Reg No6 Tube Spaghetti 500g

1/2 cup kalamata olives, pitted
100g prepared or jar pesto
2 tbsp oil
2 tbsp plain flour
500g chicken breast fillets, sliced
1/2 cup sun-dried tomatoes, chopped

Method

  1. Cook pasta according to packet directions, then drain.
  2. In a bowl toss chicken and flour until chicken is well coated.
  3. Heat oil in a pan and cook chicken in batched until brown. Remove from pan and set aside on absorbent paper.
  4. To the same pan add pesto, olives, sun-dried tomatoes and chicken. Stir until heated through.
  5. Toss pasta through the sauce and serve into bowls.
