Ingredients

San Remo Gluten Free Spirals No 226 250g

1 cup chopped parsley
2 tablespoons light cream
2 tablespoons tomato paste
1 cup vegetable stock
5 large ripe roma tomatoes, coarsely chopped
1 large red capsicum, seeds removed, finely chopped
3 middle bacon rashers, trimmed, cut into thin strips
1 tablespoon olive oil
salt and cracked black pepper to taste

Method

  1. Cook pasta according to packet directions. Drain.
  2. Heat oil in large saucepan. Stir fry bacon and capsicum over high heat, for 1-2 minutes.
  3. Stir in tomatoes, stock and paste. Cover, reduce heat, cook 4-5 minutes until tomatoes soften.
  4. Stir cream into sauce, add salt and pepper to taste and mix well.
  5. Gently toss into sauce with parsley.
