Ingredients

San Remo No 18 Penne 500g

2 x 400g cans crushed tomatoes
1 cup fresh coriander, chopped
2 tsp ground oregano
2 tsp chilli powder
3 tsp ground cumin
Salt and pepper to taste
400g can red kidney beans, drained
600g lean beef mince

Method

  1. Cook pasta according to packet directions, then drain.
  2. Fry the lean beef mince until browned in a large, non stick pan.
  3. Add the spices and cook for 2 minutes.
  4. Add in the kidney beans and crushed tomatoes and reduce the heat
  5. Cook a further 3 minutes.
  6. Toss in the drained pasta and fold through the coriander.
  7. Add salt and pepper to taste.
