Ingredients

San Remo Reg No17 Trivelle 500g

2 medium cucumbers, peeled and diced
1 clove garlic, crushed
1 medium onion, diced
375g natural yoghurt
Fresh mint, shredded
Salt and ground black pepper to taste

Method

  1. Mix the cucumber, yoghurt, onion and garlic together in a food processor until smooth. Add salt and pepper to taste.
  2. Cook Pasta according to packet directions. Rinse under cold water, drain, and then rinse again until cold. Drain thoroughly.
  3. Place in a large bowl and mix in the cucumber sauce. Garnish with mint.
