Oil Spray
Pepper
½ cup walnuts, chopped
½ cup flat leaf parsley, chopped
450g sirloin steaks
½ cup sultanas
1 lemon rind, finely grated plus juice
1½ cups beef stock

Method

  1. Place couscous and sultanas in a heatproof bowl. Bring stock to the boil in a small saucepan. Add lemon rind and ¼ cup lemon juice. Pour over couscous. Cover & stand for 5 minutes.
  2. Meanwhile, heat BBQ grill over medium-high heat until hot. Spray both sides of steak with a little oil and season with pepper. Cook for 4-5 mins per side or until your liking. Transfer to a plate. Cover with foil. Set aside for 5 mins to rest.
  3. Add walnuts & parsley to couscous. Stir with a fork to separate couscous grains. Spoon couscous onto plates. Top with steak & serve.
