Method
- Place couscous and sultanas in a heatproof bowl. Bring stock to the boil in a small saucepan. Add lemon rind and ¼ cup lemon juice. Pour over couscous. Cover & stand for 5 minutes.
- Meanwhile, heat BBQ grill over medium-high heat until hot. Spray both sides of steak with a little oil and season with pepper. Cook for 4-5 mins per side or until your liking. Transfer to a plate. Cover with foil. Set aside for 5 mins to rest.
- Add walnuts & parsley to couscous. Stir with a fork to separate couscous grains. Spoon couscous onto plates. Top with steak & serve.
