For the dressing:


  1. Place chicken, lime juice, oil, soy, fish sauce, garlic and ginger into a zip lock bag and allow to marinate for at least two hours.
  2. In a pot of boiling salted water, cook the pasta as per packet directions. Allow to cool.
  3. Place dressing ingredients into a small saucepan and heat to dissolve the sugar. Allow to cool.
  4. Thread chicken pieces onto skewers and cook on a preheated grill.
  5. Arrange pasta and salad ingredients in bowls, topping with cooked chicken skewers.
  6. Add the dressing over the top and garnish with coriander and extra lime.
  7. Enjoy with family and friends!
