1. Cook pasta as per packet directions.
  2. When pasta is cooked, rinse under running water to cool down. Strain and toss a little olive oil through the pasta.
  3. Place bacon into a medium hot pan and cook for 2 to 3mins on each side or until bacon is crispy.
  4. Remove from the pan and place on a tray with absorbent paper. Allow to cool.
  5. Tear the cos leaves into bite size pieces and place in a bowl. Chop bacon into long thin strips and slice roasted garlic into thin slices and add to the bowl.
  6. Add parmesan, egg and pasta to the bowl. Pour dressing over the ingredients and toss together.
