1. In a small saucepan bring to the boil enough water to cover the chicken. Add chicken and reduce heat to simmer and poach chicken for approx 15 mins or until chicken is cooked through. Remove chicken set aside to cool then break chicken up into small pieces. Discard water. Soup Preparation
  2. Heat oil in large saucepan.
  3. Add onion; cook while stirring until clear and soft (approx 5 mins)
  4. Add garlic; cook while stirring (approx 1 minute)
  5. Add vegetables; cook and stir until softened (approx 5 mins)
  6. Add stock and pasta; reduce heat and simmer partly covered and stirring occasionally until veggies and pasta are cooked (approx 20 mins). Extra stock or water can be added if required to adjust consistency of soup/broth.
  7. Add chicken, pepper and herbs; continue simmering (approx 5 mins)
