Method

  1. Pre-heat the oven to 160°C.
  2. Place the fennel pieces in a bowl and combine with olive oil, salt and pepper. Toss to ensure each piece of fennel is coated with olive oil.
  3. Place fennel in an ovenproof dish and bake for 15 minutes.
  4. Cook Spirals according to packet directions.
  5. Add the olive oil to a frying pan along with the onion and cook gently until soft.
  6. Add the crushed garlic and cook until soft.
  7. Add the butter and combine well.
  8. Add the Gorgonzola and stir on low heat to melt.
  9. Add the toasted walnuts to the sauce and stir.
  10. Combine the pasta and Gorgonzola sauce, serve on a platter and top with the roasted fennel. Drizzle with olive oil and freshly ground black pepper.
