1. Prepare the gnocchi according to the packet instructions, drain and set aside.
  2. Heat the olive oil in a fry pan and squeeze out small portions of the sausage and cook gently till golden.
  3. Add the onion and fennel to the pan and cook to soften.
  4. While still gently cooking, add the passata, cream and white wine. Allow the sauce to simmer and thicken. Season according to taste with salt and pepper.
  5. Toss the prepared gnocchi through the sauce. Serve with grated Parmesan and reserved fennel fronds.
