1. Heat oil in a medium pan, add onion, garlic and veal shanks, cook on high heat until brown.
  2. Add tomatoes, tomato paste, beef stock, parsley, chilli, salt and pepper. Bring to boil while stirring and then simmer gently covered until sauce thickens and meat just starts to come away from bone, approximately 1 ½ to 2 hours.
  3. Cook San Remo Spirals according to directions, drain and toss with sauce.
  4. Serve hot with veal shanks.
  5. Sauce can be prepared beforehand and re-heated.
