1. Cook pasta according to packet directions.
  2. Heat 2/3 of olive oil in a pan on medium heat. Add anchovies and fry for 2 to 3 mins using a fork to break down the anchovies.
  3. Next, place capers and olives to pan and cook for a further 5 mins.
  4. In another pan add remaining oil and heat. When hot, add breadcrumbs and cook until golden brown.
  5. Strain pasta and add immediately to pan with olives and capers. Add parsley and lemon zest to pasta. Toss together. Serve in a large bowl and finish with fried crumbs over the top.
  6. Optional, add some grated parmesan to the dish.
