Cook pasta according to pack instructions.

Combine chicken, red onion, Mexican seasoning, drained pasta, egg and coriander in a large bowl. Season with salt and pepper and mix until well combined. Using clean hands, shape mixture into four 2cm-thick patties. Place on a plate. Cover and refrigerate for 30 minutes.

Heat oil in a large, non-stick frying pan over medium heat. Cook chicken patties for 4 minutes each side or until cooked through. For the final 2 minutes of cooking, place cheese slices on top of patties, to melt.

To serve, top the bottom of each burger bun with 1 tablespoon salsa, 1 cooked chicken pattie, 1 lettuce leaf and top with 1 tablespoon guacamole.
