1. Cook pasta as per packet directions.
  2. Heat a pan on medium heat and add butter, oil and pancetta. Cook for 2 to 3 minutes or until pancetta starts to brown. Reduce heat to low and add garlic and mushrooms.
  3. Cook for further 5 minutes or until mushrooms are soft and caramelised. Add pinch of ground coffee and mix together.
  4. Place yolk, cream and half the amount of parmesan into a bowl. Turn the pan off and strain pasta.
  5. Add pasta and parsley into the pan. Pour egg mix over the pasta and a little pasta water to help mix together. Add salt & pepper to taste.
  6. Finish with shaved truffle and parmesan.
