1. Cook pasta according to packet directions.
  2. Once cooked, refresh under running cold water and strain.
  3. Add a little olive oil to pasta to stop it from sticking
  4. To make the dressing, mix olive oil and balsamic together in a bowl until combined
  5. To serve, place pasta into a large mixing bowl. Add sage, walnuts, pumpkin, cos leaves and cheese.
  6. Season with salt and pepper.
