Method

  1. Cook bacon and onion in 1 tablespoon of olive oil over a medium heat until golden. Add the crushed garlic and cook for a further minute.
  2. Cook pasta according to packet directions. Drain.
  3. Toss into the bacon mixture along with the diced tomatoes, parsley, salt and pepper.
  4. Serve with freshly grated or shaved parmesan.
