For the meatballs


  1. Mix the meatball ingredients together and roll into balls the size of a walnut. Place on a baking tray lined with paper and bake in a moderate oven 180°C for 10 minutes.
  2. Toss cherry tomatoes in olive oil and season with salt and pepper. Place them onto the baking tray with the meatballs and continue to cook for a further 8 - 10 minutes or until skins split.
  3. Cook the Rigatoni according to packet directions and drain.
  4. Heat the tomato sauce add paprika or chilli powder; add meat balls and then toss with the drained Rigatoni and roasted cherry tomatoes.
  5. Garnish with freshly grated cheese, thyme and serve.
