Preheat oven to 200°C

Cut pumpkin into small cubes, place in a baking tray, drizzle with 2 tbsp of oil, season with salt and pepper. Place in the oven for around 20-30 minutes, or until cooked through and the pumpkin is caramelised around the outside

In the meantime, heat a fry pan and toast off the walnuts for 3-5 minutes, until the walnuts are lightly coloured and toasted.

Place the sheets of curly lasagna into boiling water and cook until al dente. Make sure you drop the lasagna sheets into the water one at a time.

Once the pumpkin and pasta are cooked, add both to a hot fry pan, with the ricotta, walnuts and toss through with a little pepper and oil if needed
