Method

  1. Heat oil in large frying pan and sauté capsicum, onion and garlic until soft.
  2. Add tomatoes, blend well, season with salt and pepper.
  3. Cook slowly for 5-10 minutes, stirring occasionally.
  4. Cook shells according to packet directions. Drain, then gently blend with sauce mixture.
  5. Serve sprinkled with cheese.
