In a large pot of boiling salted water, add the pasta and cook as per packet directions. Reserve one cup of cooking liquid.

Meanwhile, heat oil in large fry pan over a medium heat. Add prawn heads and shells and fry for 2-3 minutes. Remove from pan.

Fry anchovy, garlic, chilli, and basil stems in pan till fragrant. Add cherry tomatoes and cook for another 2-3 minutes or until tomatoes start to soften. Add passata and simmer for 3-4 minutes. Stir in prawns.

Drain pasta, add reserved pasta water, and crème fraiche to the sauce and toss through pasta.

Finish with basil leaves. Serve and enjoy with family and friends!
