Heat a large saucepan or crockpot and drizzle with oil.

Add onion and garlic to the saucepan or crockpot and cook for 1 minute or until softened.

Add mince and break up with a wooden spoon, cooking until lightly pink.

Add tomato, mushrooms, carrot, capsicum and celery, and cook for a few minutes or until celery has softened.

Add passata, Italian herbs, salt, pepper, vegetable stock/bone broth and wagon wheel pasta.

Bring to a boil and reduce to a simmer, cook for 10-12 minutes or until pasta is cooked and sauce has reduced.

Serve topped with fresh herbs and parmesan and enjoy with family and friends!
