Method

  1. Heat up the oil in a large pan. Add the anchovies and stir with a wooden spoon to break them down before adding in garlic and chopped parsley stacks.
  2. Add uncooked pasta to the pan and slightly toast for 1 minute.
  3. Add boiling water from a kettle, just enough to cover the pasta and reduce the heat.
  4. Add the tinned tomatoes, olives, capers and parmesan rind, and stir well.
  5. Cook, stirring occasionally, for 7-8 minutes or until the pasta is al dente.
  6. Add in grated parmesan cheese.
  7. Discard the cheese rind and garlic, before serving with a dusting of more parmesan and chopped parsley and enjoy with family and friends!
