For Pesto

Method

  1. Into a pot of boiling salted water, cook the pasta as per packet instruction.
  2. To make the pesto combine capsicum, cashews, chilli, garlic, parmesan, paprika, and olive oil. Blend until smooth, season to taste and set aside.
  3. In a non-stick pan, fry chorizo from cold to render out fat until each side is lightly browned. Add onion and cook for 2 minutes.
  4. Add fresh capsicum and cook for a further 3 minutes.
  5. Drain pasta and rinse under cold running water until it is at room temperature.
  6. To assemble the salad, combine pasta, pesto, tomato, rocket, cooked chorizo, onion and capsicum and stir to combine.
  7. Transfer to a serving bowl and garnish with rocket.
  8. Serve and enjoy with friends and family!
