Conchiglie with Prawns and Pine Nuts

Ingredients
Artisan San Remo Conchiglie Giganti No551
100ml olive oil
1 shallot, diced finely
1 garlic clove, peeled
1 hot chilli, diced - or milder if preferred
Salt and pepper
200g peeled prawn tails, cut into bite sized pieces
50g toasted pine nuts
1 bunch of parsley, leaves finely chopped
Zest of one lemon
Method
Cook the pasta according to packet directions.
In a frying pan over a medium heat add the oil, shallots, garlic and chilli with a pinch of salt and pepper, cook for a couple of minutes.
When the pasta is a minute away from being ready add the prawns to the frypan and cook.
Drain pasta, and stir through sauce. Taste for seasoning and add more salt and pepper if required.
Finish with the pine nuts, parsley and lemon zest.
