Method

  1. Cook the tortellini according to directions then drain.
  2. Heat oil in a fry pan and add chorizo. Fry for 3-4 minutes until it has browned a little, then set aside on some paper towel.
  3. Add onions to the pan and fry until translucent, then add garlic and fry for a further minute.
  4. Add the tomato-based sauce to the pan to heat through.
  5. Add cooked chorizo and brocollini then toss with the tortellini.
  6. Season with salt and pepper.
  7. Garnish with grated cheese and serve.
