Semolina is a coarse grind of high protein durum wheat. This coarse grind gives a gorgeous colour, texture and great flavour to pasta, bread, pizza crust and cakes. Semolina naturally has more of a yellow colour and has a richer flavour than a standard all purpose flour.
Semolina can be used for pasta, pizza, bread, cakes and crusts.
Perfect Pasta Dough Recipe:
250g San Remo Durum Wheat Semolina
250g 00 Flour
1 pinch salt
5 extra-large eggs, lightly beaten
1 tbsp olive oil
In a large mixing bowl sift semolina, flour and salt together, mixing until well combined.
Create a well in the centre of the flour mixture.
Combine eggs and olive oil together in a small bowl. Pour into the well and using fingertips in a circular motion, mix flour into egg mixture creating a dough ball.
On a lightly floured surface, knead dough for 5 minutes or until smooth.
Set up pasta machine and roll dough in batches to desired thickness and cut into required shape.
Cook in Large pot of boiling salted water for 2-3 minute. Drain and Enjoy.
