1. In a pot of boiling salted water, add the pasta and cook as per packet directions.
  2. Add the butter to a frypan allowing it to melt and slowly brown off. As the butter starts to foam, add the sage and cook until the sage is crispy.
  3. Add the cooked pasta, some of the pasta water, chilli flakes, salt and pepper and toss to combine.
  4. Serve immediately with freshly grated Parmigiano cheese and extra chilli if desired.
