1. In a medium saucepan, heat oil and lightly brown onion and garlic. Add meat and stir until well cooked.
  2. Mix in herbs. Increase heat; add wine and cook, stirring for 2 minutes. Add tomatoes with juice, tomato paste and sugar. Season with salt and pepper.
  3. Gently simmer over moderate heat, stirring occasionally, for 20 – 30 minutes or until sauce has reached desired thickness.
  4. Cook pasta according to packet directions, drain and toss with grated cheese, reserving some for finishing garnish.
  5. Mix ½ of the meat sauce into the pasta and serve with remaining meat sauce spooned over the top.
  6. Sprinkle with extra cheese.
