rocket & walnut pesto


  1. Cook pasta according to packet directions. Drain and rinse under cold water. Drain well and place in a large bowl.
  2. Meanwhile make pesto. Reserve half a bunch of rocket leaves. Place walnuts in a food processor and process until finely chopped. Add remaining rocket, basil, parmesan and garlic and process until almost smooth. Add olive oil, lemon juice, pepper and salt and process until well combined.
  3. Add pesto to pasta and stir to combine. Tear remaining rocket into pieces and add to pasta along with semi-dried tomatoes, bocconcini, artichokes and olives. Stir to combine.
