Inspired by the Baked Feta Pasta trend this recipe is simple and easy and will be a new mid-week favourite! It’s packed full of protein thanks to our Pasta Pro so it’s a great vegetarian friendly dinner idea!
Preheat oven to 190°C.
Place chickpeas, tomatoes, onion, garlic, ricotta and olives in an oven tray.
Drizzle with olive oil, season with salt & pepper and bake for 10 minutes.
Meanwhile, in a pot of boiling salted water, cook pasta as per packet instructions.
Add cooked pasta to the oven tray and mix through. Garnish with parsley and parmesan.
