Into a pot of boiling salted water, add the pasta and cook as per packet directions. Reserve one cup of the pasta water.

Heat olive oil in a pot over low to medium heat, add onions and sauté for around 10 minutes until soft.

Add anchovies, mashing them through with a wooden spoon, followed by the white wine and 1/2 cup of pasta water.

Turn down the heat down and cover for 5-8 minutes, stirring occasionally.

Once a creamy-like sauce forms, add the pasta. If it is looking a bit dry, add some extra pasta water.

Meanwhile, fry the leftover whole anchovy fillets in a pan browning on either side. Place them on a paper towel to dry.

When dried, crumble the anchovies up like breadcrumbs.

Serve and top the pasta with a generous amount of parsley, anchovy breadcrumbs and pepper.
