Method

  1. Heat a large frypan over medium heat, add olive oil and onion.
  2. Lower heat and cook onions until soft and caramelised, about 15 minutes.
  3. Add garlic and anchovies, breaking the anchovies up with a wooden spoon until they dissolve into the sauce.
  4. Add the red wine vinegar.
  5. Into a pot of boiling salted water, add the pasta and cook as per packet directions. Reserve one cup of the pasta water.
  6. Add the pasta to the pan along with the parsley and season well with pepper.
  7. Toss well to combine, adding a little pasta water to loosen and create a sauce.
  8. Garnish with more parsley before serving and enjoying with family and friends!
