Roasted Chickpeas (for a vegan alternative)



  1. Preheat oven to 180ºC.
  2. To make the croutons, toss chopped bread with olive oil and garlic powder in a bowl. Next spread out onto a baking tray and bake for 15 minutes or until browned, turning over halfway.
  3. In a pot of boiling, salted water cook pasta as per packet directions. When done, drain and rinse under cold water.
  4. If using bacon, cook accordingly (or roast your chickpeas).
  5. In a bowl add mayonnaise, lemon juice, apple cider vinegar, garlic powder and olive oil, mix well to combine.
  6. In a large bowl, add pasta, rocket, tomatoes, red onion, bacon (or chickpeas) and avocado, drizzle with sauce and toss to combine.
  7. Top with croutons and enjoy!
