Ingredients
San Remo Reg No23 Bowties 500g
3tbsp tomato concentrato
100g coloured cherry tomatoes
1 ball of soft buffalo mozzarella
¼ bunch basil leaves, picked
Sea salt
Pepper
Parmiggiano cheese
Method
Bring a pot of salted water to the boil and cook the pasta according to packet directions.
Toss the cooked pasta in a bowl with the concentrato, tomatoes, mozzarella and basil. Season with salt and pepper.
Serve in a bowl and serve with freshly grated parmiggiano cheese.
