1. To make the sauce: heat the oil in a saucepan and sauté the garlic for 1 minute, add the smoky paprika and stir till fragrant.
  2. Add the tomatoes and juice, balsamic vinegar and sugar and simmer gently till the sauce thickens, season to taste with salt and pepper.
  3. Cook the pasta according to the packet directions.
  4. Drain the tortellini and toss through the sauce.   Serving suggestion: Combine baby rocket leaves and parmesan shavings in a bowl, drizzle with olive oil and season with salt and pepper to taste.
