Chimichurri Dressing


  1. Cook pasta according to packet directions. Drain and rinse under cold water. Drain well and place in a large bowl.
  2. Meanwhile, make chimichurri dressing. Place parsley, coriander, oregano leaves, garlic and salt in a food processor and process until finely chopped. Add vinegar, mustard, chilli flakes and oil and process until well combined. Add to pasta and stir to combine.
  3. Add tomatoes and rocket to pasta and toss gently.
  4. Serve with your choice of meat.
