For the Sauce:


  1. To make the sauce, combine all sauce ingredients into a mixing bowl and whisk until smooth. Set aside.
  2. In a pot of boiling salted water, cook pasta as per packet directions.
  3. Heat oil in a wok on medium heat. Add spring onion and cook for 1 minute.
  4. Add garlic and ginger and cook for another minute.
  5. Add pork mince and fry off, breaking it up with a wooden spoon, until well browned and cooked.
  6. Add sauce and cook for 3-5 minutes or until sauce has reduced by half.
  7. To serve, place noodles into two bowls, top with pork bolognese and place cucumber and prawn crackers (2 per bowl) on the side
  8. Garnish with coriander and more spring onion.
