Method

  1. Preheat the oven to 180°C
  2. In a large mixing bowl, begin to prepare the meatballs. Combine both minces, breadcrumbs, eggs, olive oil, parsley and parmesan
  3. Season with salt and pepper. Combine altogether using your hands and mix well
  4. Roll meatballs, into 10cent size balls. Place balls on to a tray. Once all balls are rolled, set aside and start preparing the sauce
  5. Start the sauce by heatin olive oil in a pan over a medium heat. Add onion & garlic
  6. Sauté for 3-5 minutes or until soft
  7. Add tomatoes and 2 cups of water. Stir and bring to the boil then reduce heat to a simmer
  8. Cook for 10 minutes and season with salt and pepper
  9. Next, place the set aside meatballs one by one into the sauce
  10. Cook for 25 mins or until meatballs are cooked. Check sauce for seasoning and if needed adjust with salt and pepper
  11. To construct the lasanga, start by spreading a ladle of sauce across the base of a baking dish
  12. Next, place 2 sheets of lasagna on top of the sauce and layer with more sauce and meatballs to cover the pasta evenly
  13. Sprinkle a good handful of parmesan and mozzarella on top
  14. Repeat the process until the last layer
  15. Finish with sauce on top and cover top layer with mozzarella
  16. Bake in the oven for 35 to 45 mins or until pasta is soft.
  17. Serve and enjoy with family and friends!
