Method

  1. Into a pot of boiling salted water, cook pasta according to packet directions.
  2. Meanwhile, heat a frying/grill pan and drizzle with oil.
  3. Add chicken, sprinkle with garlic and season with salt and pepper. Flip once lightly browned
    and cook until tender. Remove from heat and set aside.
  4. Whisk eggs in a bowl. Add cream, milk, lemon and chives and whisk until combined
  5. Once pasta is cooked, drain and return to saucepan. Add creamy lemon sauce and stir
    through until pasta is coated.
  6. Serve carbonara topped with grilled chicken, parmesan and season with salt and pepper
