1. Cook San Remo Ready Pasta Macaroni according to the packet directions.
  2. Heat olive oil in a saucepan and add the onion and sauté for a few minutes. Add the garlic and sauté for another minute.
  3. Add the mushrooms and brown them, around 4 minutes.
  4. Add in ricotta and pasta and mix through until warm.
  5. Stir through parsley and season with salt and pepper.
  6. Serve between two bowls and garnish with parsley. Enjoy!
