Method

  1. Place olive oil, butter and garlic in a deep pan allowing the butter to melt. Cook for 2mins.
  2. Next, mix in the pumpkin and cook for 5 to 8 mins.
  3. Pour stock over pumpkin and bring to the boil.
  4. Let it simmer for 7 mins or until soft.
  5. Pour into a food processor and blend until smooth.
  6. Place back into pan and bring to the boil.
  7. Add pasta to pan and cook as per packet directions.
  8. Season with salt and pepper
  9. Remove from heat, add dill and half the amount of feta.
  10. Serve over 4 bowls and finish with remaining feta and pumpkin seeds on top
  11. Enjoy with family and friends!
