For the dressing:


  1. In a pot of boiling salted water, add the pasta and cook as per packet directions.
  2. Drain the pasta, refresh under cold running water and toss through olive oil.
  3. Arrange tomatoes, cucumber, baby spinach, cannellini beans, bocconcini balls and olives over 2 bowls.
  4. Place the dressing ingredients into a small jar and shake well to combine.
  5. Pour dressing over the two bowls and toss through before serving and enjoying!
