Gluten Free Penne, Tuna and Red Onion Pasta

Ingredients
San Remo Gluten Free Penne No 227 350g
Salt and cracked black pepper to taste
1.5 tablespoons red wine vinegar
3 tablespoons olive oil
185g tuna in brine, drained
4 medium ripe tomatoes, diced
3/4 medium red onion, finely sliced
3 tablespoons pine nuts (optional)
1.5 cups fresh basil leaves
Method
Cook pasta according to packet directions. Drain, rinse under cold water and drain again.
Place in a bowl with the salad ingredients. Toss well to coat all the pasta.
Add salt and cracked black pepper to taste.
Garnish with basil leaves and toss through lightly.
